Summer Program: Food Landscape in Florence

Food and Wine have always been closely linked to Italian Culture and Art! Savethe dates and join this program to discover and taste the great food and wines ofItaly. This is a culinary voyage which will include outstanding food writing andfood styling and food photography taught by an exceptional faculty. Tuscany is the regional focus of the trip. You’ll learn the cultural rules of foodconsumption, the comparison with the rules of music, dancing and poetry, the relationships between food and religion, gender, tradition, art, lifestyle. You’ll meet chefs, sommeliers and at the same time, you’ll experience the beautiful artworks and landscape of Tuscany!

Dates: July 16th through July 24th, 2011

Day 1:

– Arrival in Florence, students will be picked-up and escorted to hotel. Housing check-in. Welcome dinner.

Day 2:

– Orientation and Program Overview: “Food Landscape of Italy”

– Architectural Walking tour of the Renaissance Center of Florence and visit to the internal part of the Duomo and Baptistery.

Day 3:

– Lecture & Workshop – Regional cuisine, Tuscany and its summer specialties. The workshop will include an introduction to the food styling and plate design, will be followed and combined with the Food Photography class.

– The participant’s styled plates will be used to collect photographic materials for the final Food Writing and Photography project.

– Workshop on Food Photography I: The basics of photography: camera settings (white balance, file quality, ISO speed, manual and automatic mode, lightmeter)

– Basic tips for lighting and food shooting. Artificial light: tungsten. Processing, presentation and print: photo editing and post production.

– Food Writing Workshop I: Regional Cuisine

Day 4:

– Visit to San Lorenzo Fresh Food Market, the central produce market where the reshest ingredients are available. The top floor houses all of the finest fresh fruits and vegetable, while the ground floor displays a variety of meats, fish, cheese and bread.

– Workshop on Food Photography II: Practical work with natural or artificial lightin a kitchen. Shooting the chef in action at GANZO (basics of portrait photography).

– Food Writing Workshop II: Gastronomy

Day 5:

– Lecture & Workshop: “Olive Oil in Tuscan Cuisine”, differences and usage of Olive Oil in the Culture and Diet.

– The workshop will include a food styling andplate design and will be used also to collect photographic materials for the final Food Writing and Photography project.

– Workshop on Food Photography III: Food styling. Tips, tricks and props to improve the shooting.

Day 6:

– Lecture and Workshop: Wines of Italy, an introduction to the art of pairing food and wine.


– Workshop on Food Photography III: An introduction to wine and spirits Photography.

– Food Writing Workshop III: Wine

Day 7:

– Lecture and Cooking Class

– Italian cuisine and the Mediterranean, exploration ofthe Italian cuisine as a part of the Mediterranean culinary culture. The workshop will include food styling and plate design and will be used also to collect photographic materials for the final Food Writing and Photography project.

– Lecture and final review on Food Writing and Photography. An Introduction tographic layout.

Day 8:

– Field Trip to Casamonti and Farewell dinner

Day 9: Departure from Florence

Cost: USD $1.980

Food Styling & Food Photography Workshop in Madrid

Join Photographer Paloma Portillo from December 13th through December 17th in Madrid when she will give a Food Styling and Food Photography Workshop which will allow participants to advance your career, improve your portfolio or learn new skills and connect with other professionals. Join
Topics to be discussed include:

– A food shoot from start to finish
– Lighting set-ups for studio and location shooting
– Equipment
– Post-production skills
– Tools, tricks and techniques
– Questions to ask your client to prepare the job or to consider when photographing your own work

This is hands on practice course and you will be able to photograph under the tutelage of professionals. Dishes will be prepared on the set by a professional Chef and you will be able to style and photograph your work.

Alejandro Guerani, the Photographer who makes mouths water and keep eyes wide open.

I am honored that Photographer Alessandro Guerani accepted to teach a Food Photography Workshop organized by Business Projects – Study Abroad Opportunities. From my point of view, Alessandro’s photographs are magnificent pieces of art. His sense of style, talent and understanding of the essence of people and things allow him to produce extraordinary images that  are memorable in our minds.

About Alessandro Guerani: “He was born in 1969 in Bologna, Italy, where he still lives. He started using cameras at the age of twenty as a complement to his studies about medieval and Renaissance arts and history. Barbara Torresan, Food Stylist

Meet Barbara Torresan whose great passions are Cooking and Food Photography & Food Styling. She refers to herself as a dreamer, perfectionist, outgoing, and a lover of the beauty at a dining table and gourmet cuisine. The truth is that Barbara is all the above and has an unrestrained passion for tasty and good looking food.

She has her own banqueting and catering business in Milan and during the past year, she has dedicated quite some time to the art of cooking and working hand by hand with food photographer Alessandro Guerani. They make a great formula and fantastic team and have produced an outstanding gallery which has been published in Italian magazines as well as in different websites.

I am very glad by the fact that Barbara will be part of the coming up Digital Food Photography Workshop that Business Projects – Study Abroad Projects has organized and which will take place in Siena, Italy from October 11th through October 16th. While Photographer Alessandro Guerani will teach food photography at different levels and cover a variety of topics (exposure, lighting, food and prop styling, different composition techniques, lighting set-ups for studio and location shooting, camera and lighting equipment and post-production skills), Barbara will contribute to the understanding of how to style food and prepare a photo shoot. Participants will have the opportunity to see unstyled and styled food and comprehend the impact of an artfully-styled plate.
